why would you want to wind the fish up ?

Couple of reasons:

To get them flaring for pics

For a little exercise

Get them rousted up to encourage breeding

To get them in a fighting mood, and then fighting them.

the only one that a good fish keeper should use them for is the breeding one then

flaring for pics - just wind them up for your self!
exercis - have a big tank!
to fight them - surely cruelty to animals
tbh i would like to see them fight but would never do it myself
