Best Food Other Than Flake

I work at a Pet store inc, I would like to know if

* feeding shrimp pellets will hurt koi or larger gold fish -->(P&P we must only feed flake even for larger fish)

I think for what we stock in the tanks that some will not get enough food if I do not supplement their diet. I have not been feed any thing but flake for the time being.
