We have two apple snails who used to live together but now live in seperate tanks.

We separated them about two months ago but now one of them has layed a clutch of eggs just above the waterline on the glass.

Will apple snails still lay eggs without a male present? or perhaps they can store sperm?

what are the chances of the eggs being fertile?

They can store sperm for a long, long time. 2 years I think so it's very possible the eggs are fertile. It's also possible they aren't. You'll know within a few weeks if they hatch or not.
