Can anyone tell me whats the best way to prune these plants?

Is it ok to cut the leaves half way down? Is there a better way?

I also have Aponogeton Boivinianus. Would i prune this the same way?

You cant prune them as such, if you cut part of a leaf off the chances are that it will kill the leaf, or at any rate half cut leaves wouldn’t look so good. If they are taking up too much room you can cut some of the leaves off at the base.
 
i dont know if they are similar to aponogetton ulvaceus but i cut my aponogetton at the base of the leaf and it works fine for me, i agree, cutting halfway would be pretty ugly and will brown the tips.
