An interesting idea involving rice

And about their nutritional needs. It might be best to put lots of fertiliser on the bottom substrate and then also put liquid fertiliser. I'm sure they will do fine with it.

I haven't managed to find rice that will uhm, grow, so I haven't tried to do it now when I don't have nasty cats trying to destroy everything green they see

And I agree, it is a great idea and if you just find good rice, get them and try :)

Hi Synirr :)

This is a very interesting idea.

If rice is an annual plant that grows, produces seed and then dies, will it actually need much additional fertilizer than it can get from a stocked tank? :dunno:

If you were considering making an outdoor pond that would grow this crop year after year, wouldn't your soil and fertilization considerations be different than setting up an aquarium? In that case, you would be setting up conditions that would allow heavy concentrations of plants to pull nutrients out of it year after year without depleting the soil. With a tank, you will not necessarily have this consideration.

Why not post in the Plants and Planted Tanks forum and see what our members in there say?

BTW, weather loaches are fine fish that also live in rice paddies. Perhaps you might want to include some of them. :D
