So today I forgot to feed my fish until after the light went out, so I turned on the light and fed the fish. None of them ate and all of the food just went to the bottom. Can just one time like that mess with my ammonia and nitrite levels enough to harm the fish.?

Fish sleep and don't wake right at lights on ,
How large is the tank? How mature is your filtration ? and how adverse are you to vacing the obvious waste out after lights on tomorrow? assuming you would even see it then?

Bottom line is your likely fine unless your mid fish-in or have a tiny biotope.

Dont make a habit of it and your just fine..
You Want a regular schedule for the most part and you want to watch for obvious problems...
But if you become prone to obsessing or overreacting you will cause more harm than good to yourself than the fish really.. A mid week water change on a whim cause You may have over fed wont hurt the fish , that's for sure, they wont mind, but did you really need to??

Relax,Its all good, If your normally on task this is not a problem.
If you truly are worried than spend a second sucking just the excess up with just the hose from your vac.
Might be 1/4 gal at most.

Should have just skipped the feeding really as you did not deprive the fish at all doing so. But I've done worse, trust me
