I have two large Amazons in my 20 gallon and one of them just loves to grow. Now, it has two long branches on it that have leaves and roots. I know that in the wild, these stems grow until the leaves and roots weight the branch down and then root into the soil. But, can i snip them off and plant them elsewhere? If so, how do I do it to avoid damage to the "Mother" plant as it is the best one I've ever had.

Just snip it off if the roots are big enough for replanting, it wont harm the mother plant at all.
