I know Carbon takes impurities out of the water but can it interfere with the PH?.
 
No, it won't affect pH.
 
It doesn't help with most of the 'important' impurities in your tank either; it will not remove ammonia, nitrite or nitrate.
 
It's main use is for removing traces of medication after a treatment and it can help reduce tannin if you have a lot of bogwood and don't like the tea stained look.
 
Thanks fluttermoth its just I am using it to take out the Copper I was using to get rid of a snail explosion.
 
Ah, it'll remove heavy metals like copper all right :)
