My 1,7 g-Tank is nearly cycled, cero Ammonia readings, Nitrates down to 20, Nitrite spiking!

How much Water-Exchange should I do exactly per day, to make it not to stressful on my Betta and Ghost-Shrimps in there because of the n-spike, but also not so slow down the cycling unnecessarily?

I also have besides the filter and a airstone a Carbon-Pillow (C-100) in there, can that slow cycling down, should I take it out?
 
I'd reccommend about 20% per day to keep the impact on your fish to a minimum. Don't worry about the carbon pillow, you only need to remove this if you ever need to medicate the tank due to a disease/illness, it won't affect the cycle.
