So Every night, I test and add ammonia and it is at 0ppm which is great! I test for nitrites and they are off the scale, same with Nirates.

Do I just keep adding ammonia until there is no more nitRITES? then do a water change to lower the NITRATES

yes keep adding until your amonia goes to 0 in 12 hours and your nitrites go to 0 in around the same amount of time.

Though, my PH is kind of low I think its around 6.5-7. I just dont want it to stall....which it hasnt so thats good!

a ph of 6.5 - 7 is good for most fish, unless you are keeping a hard water fishy, but even then most fish from an lfs will have been kept around 7
