I want to do this, but I'm wondering what i should get stocking wise, something colorful would be nice, but any suggestions you can give me would be a great help!

Hrrm, if it were me, I'd do a planted tank, and put in it...

Red-Nosed Shrimp
Amano Shrimp
Cherry Shrimp
Tiger/Bee/Crystal Red shrimp (only one, as they can crossbreed)
Cajun Dwarf Crayfish
Malaysian Trumpet Snails
Apple Snail (Brigs or Spixi)

Ive heard that plants can really mess up an invert tank, they draw away nuturients, and block out food algae, is this true?

While some enthusiasts prefer to keep their shrimp in plantless tanks with leaf litter, my shrimp are perfectly healthy in a planted tank. To be honest, unless you're a crystal red breeder, I'd go for a planted tank. Java ferns tend to grow thread algae, which most shrimp will happily eat. :)

it dont think a tank with shrimps would look good without plants.
a planted tank is certainly a must with any invertabrate tank.
eschaton idea sounds a good one, not sure about the Cajun Dwarf Crayfish, if its allowed in the uk or not, but researching it, it looks a very intresting invertabrate. i would be careful about the apple snails too, the Brigs i think would be ok, but the Spixi may eat plants.

oh very sorry, didnt think of looking where you were from.
my mistake. in that case i would defo keep an eye for them. shame i cant ghet them over here. i want a small crayfish
