I have created an Excel (2007) spreadsheet to record my Freshwater tanks water parameters.
The spreadsheet produces 'auto adjusting' graphs, this can make it a little easier to spot trends.

I use it to record:
Ammonia
Nitrites
Nitrates
Water changes
Vacumn history
I also use the Excel 'comments' facility for recording things like adding fish/plants etc. Just hover over a cell which has a small red triangle in the top right hand corner.
I do not monitor Ph as mine remains constant, although I could add this if you wish.

N.B. Excel 2007 has the .xlsx file extension. However, the file will still load into Excel 2003 (in compatability mode) & will still work.
