Ive just seen one of my dwarf gourami's squirting water out of the top of the tank, is this normal? and what is it a sign of???

An Extremely Happy and well cared for Gourami.
Dwarfs Spit water to snatch flies and insects from hanging leaves in the wild, i believe ?

Thats what i would expect it to do in the wild for sure.
 
Yes, it's normal. It may be "practising" bubblenest building, but some gouramis (Trichogaster spp.) will use water to spit down food, just like archerfish do. There's a photo in 'Gouramis and Other Anabantoids', Hans-Joachim Richter, 1988.

LOL That would explain why I always felt like I was been spit on every time I'm near my tank. I never knew dwarf gouramis did this.
