What Plants Will My Apple Snail Not Eat?

anachris and temple plant are the only ones i've bought so far.. but i'm getting ready to kind of redo my tank and i really want to try to get some plants that my apple snail wont eat! i was thinking about getting some java fern, but i don't want to waste my money if she's just gonna eat em' all up! suggestions please? :)

One of my apple snails eats ANYTHING.
I have: Java Fern, Java Moss, Willow Moss and Water Sprite. All of them are on his list of salads.
I feed him and his friend with flakes, hoping he will stop going for my fern, but last night I found the little buffoon atop my Java Fern's biggest leaf with a new growing plant. He was taking a bite out of one leaf and then waving his antennae and his air siphon in the current, it was quite a funny scene, it seemed like he was dancing or something. He's the weirdo of the two snails I have.

I think only thing you can do is feed them more till they're full, but even then it's not a guarantee they won't touch plants.
 
ive had apple snails for years and yet to see one eatting a healthy plant they will eat a decaying one and java fern is one tought plant not may things will touch it in my opinion

Lorenzo likes to eat the newest leaves for some odd reason. He also has a few other... questionable habits...

That is pretty strange seeing as a species they can't digest healthy plants? Could it be that perhaps you have a different breed of apple snail? From memory there are two which look pretty similar and often are both sold as apple snails...

By the way, the one in this pic never touches healthy plants. But I have the other one, which looks identical, and he eats anything that has recently sprouted. Used to constantly eat my ceratopteris' new sprouts. He will not touch OLD leaves, but new ones... -_- are his favorites.
And they get a ton of flakes and boiled carrot sometimes, so I don't get it... why is Lorenzo always after new leaves? Then again, why is he jumping off the walls, doing displays with his horns and siphon while atop the plant, digging himself nests in the sand, climbing over my catfish, munching on the wood?

EDIT: add to that list: jumping on the substrate.
