I wanted to know what you would do if you where able to have a 2000-5000 gallon fish tank what your substrate would be plants, driftwood, and especially what type of fish...it would be interesting to see what ideas you guys have.

Forget substrate lol, I would have freshwater predators like Arowanas, red tail cats, tiger shovel nose, etc...
Or I would do a massive #16##### SA/CA cichlid tank.

30x Geophagus sp. 'Red head Tapajos',
8x Heros sp. 'Rotkeil',
30x Silver Dollars (or Red Hooks),
10x Festive Cichlid,
2x Pike Cichlid (of some type),
5x Leporinus sp.,
10x Altum Angelfish,
20x Hoplo Catfish,
20x Flagtail Porthole Catfish,
1x L14 Plec,
1x Royal Panaque,
4x Green Phantom Plec.

Sand substrate, plenty of lovely wood . I'd be in heaven.

i'd have 1 betta.

That would be overstocking, its only good for a couple shrimp or snails.
