Changing Stocking

How do people go about this? Say you've got a shoal of one type of fish and a few die and you think you'd like to swap them out for something new. Get a few of the new ones and keep a sort of half and half shoal till the old ones die? Could take years.
Do LFS take fish in generally?
 
I've traded fish for others before at my lfs. But that all just depends on your lfs. 
Only way to know would be to go in and ask them of they would do this for you :) 
 
Just out of curiosity what have you got and wanting to change to? 
 
Stocking as my sig. I love the endlers but went to the LFS I got them from today and they only get them in periodically.
The hengelis are ok and I appreciate they'll look better in a larger group, but I only have room for so many.
LFS had a display tank with about 60 in and even that looked 'ok' for my taste. So I was wondering if to change them for perhaps fork tailed rainbows or ember tetras.
They do make a nice contrast in size, body shape and behaviour for the gourami and endlers.
I'd love another gourami, but I went from a male and 2 female trio, to just the male, to buy 2 more females which turned out to be male, so 3 males, to 2 males currently. So I can only see the option of adding 3 females, which would probably be overstocked and I might end up with more males!
