Depends on the snail. Nerites lay eggs but they need brackish water to hatch.With the exception of pest snails, you shouln't have to worry about snails overpopulating, :)

Gourami could work, and in a 55gal you could keep pretty much any variety of them.

You could always get a couple of snails, maybe different kinds for some variety.

Silver dollars can get pretty big and tend to be mellow-semi-aggressive, so not a good match for angels or your tank size. The RFS's aren't suitable either, they'll also get big and will go after the angels. You really do need a bigger tank for the angels though.

Wood you can pour boiling water over the wood and then let it soak for a while, boiling it will loosen the fibres within the wood.

With betta's it's a toss up, some are fine with anything in the tank and others will kill every last thing down to snails.
