Most of the attractive sarasa comet goldfish I've seen are younger adults. Do all (or most) mature sarasa comets loose their red colouring?

If your fish are stress free (enough territory/co-species, no predators etc) and breeding then surely they must be experiencing some form of well-being as we know it.
