If you ignore all of the math and just follow the steps on the cycling guide you should be fine. Understanding and using the math would be of great benefit in adding the ammonia.
Is the ammonia you added just regular ammonia? You have to make sure there is nothing else in it..

I would imagine if it never had water the the filters should be fine. Carbon on the other hand has a expectation date on it. I believe it is only good for a month or two after it is opened and oxygen is allowed to pass through it.

Yes they love my aquarium. They are small now and I have made arrangements for a larger home when the time comes. They are not really sharks... they get along well with my guaramie. The bala sharks are actually distantly related to carps. the guaramie hide most of the time and do not come out...
