I can't seem to find anything that can tell me, except that a thicker layer of sand will hopefully mean they won't get as deep as the plant substrate.

I've got 3 kuhlis (plus a 12" voilet goby that the kuhlis treat like a home base) and only use play sand as my substrate. My kuhlis don't dig at all - at least as far as I've ever seen. Then again, they've got lots of other areas to hide, so maybe they don't need to?

The goby, on the other hand, can move some sand when he has a mind to. A LOT of sand. I just sort of armor my roots with rocks where I can and that more or less solves the problem. Then again, my aquascaping will probably never get anywhere near contest quality as long as that giant ugly beast is still in there.

I was advised by my LFS to have Kuhli's in a planted tank as they break up the substrate and keep it 'loose'

Maybe along the same lines as mts? :dunno:

i have 2 and they dont bother my plants. it isnt like they cant move the gravel if they wanted to. they just choose to root around in it instead
