I think I’ve heard that those spiky things on the plecos face are something with the gills. I’ve only seen it on mine once or twice in higher stress situations, like netting him out of the tank to move him to his new one today.
 
breeding tubercles that appear sometimes on male bristlenose and possibly other suckermouth catfish. There should be a set on both sides and look like alien tentacles with a small hole in the centre. There's a couple of threads on the forum about them.

 
I’m pretty sure what you’re seeing there are interopercula odontodes. They vary on how they look from long spines to small spikey extensions that stick out and get caught up when you catch the ancistrus (bristlenose) in a net!
