I have a 20 gallon tall. With 1 honey gourami, 6 danios, 4 emerald corys, and 4 albino corys.
[it's a bit overstocked but I make sure to keep up with water changes]

I have 2 main plants in my fish tank. Cryptocorne.
They're both located in the far back corners and have both sent off run offs (which I'm not sure is another plant since they're still attached to the main plant)
-

I have 6-8 aponogeton bulbs sprouted in the tank also. I've grown fond of them. Can I add 15-20 more?

I want to finally be able to get rid of all and any fake plants in my fish tank and just have live plants. I was told a lot of plants crowd out fish, but the bulb plants have thin leaves, thin stems, etc so they don't really pose any challenge for the fish to swim.

And the plants help get rid of unwanted nitrates (but I usually have low nitrates) etc.

So could I add 15-20 more bulb plants to my tank...?
Or is having too many plants in the tank bad?

I personally think 6-8 aponogeton is to much in a 20g. It's true, you can never have enough plants, however Aponogtons get massive and having 20 bulbs in a 20g will look a bit silly. There won't be much space for swimming.

Can't have too many plants - You have to keep an eye out that the flow around your tank doesn't become restricted though, otherwise you'll be asking for algae.

As previously said.......you only have too many plants when they restrict flow too much and when you dont give them enough nutrients and/or CO2. Light can also be cut out to plants at the bottom.

The answer really depends on what fish one keeps. My experience is that open water schooling fish such as rasboras or tetras need to have some good open spaces to swim in. So closing off too much space will often result in their just hiding among the plants rather than exhibiting their normal schooling behavior.

So the answer would be yes, it is possible to have too many plants. But like everything else aquarium, the answer really depends on a combination of factors and simply can not be answered as a general rule to apply in any and all circumstances.
