Its been 5 days since i added 48 drops of ammonia, i've tested the ammonia & nitrite today and the ammonia is about 2.0 and the nitrite is 8.0, do i carry on just testing?.

Yes, keep testing every third day until ammonia drops below 0.75.
Adding too much ammonia makes a lot of nitrite. At ~15 ppm nitrite, the cycle stalls. Our test kits don't usually measure that high so to keep nitrite from reaching stall point, ammonia is only added when targets have been reached. The first target is ammonia under 0.75 with nitrite above 2.0. You have reached the second part but not the first part yet.
When your ammonia does drop below 0.75, I would add less than 48 drops as that gave a bit more than 3 ppm. Try 40 to 42 drops instead.
