If you are going to be pulling up plants that are rooted in the substrat4e, like the crypts, and if there are a lot of them, I suggest you remove the fish to a temporary "tank." The reason is, crypts have extensive root systems, and they can go for considerable distances. When you pull these up, you could have a mess. You might also disturb areas under wood (or rock) that are anaerobic, and this can poison fish (another member had this happen). If it is just one or two plants, this is less necessary.

On the pH, I concur with @Essjay you want to leave it alone. It will likely lower, and once it does over several weeks, and the tank becomes biologically stable, that is where it will tend to remain.

Epsom salts and bicarbonates are not ways to raise GH and pH. Epsom salt is magnesium sulphate, and this will increase GH but unfortunately not do so with calcium just magnesium, and that is not helpful to harder water fish/shrimp. Bicarbonate of soda (baking soda) is sometimes suggested as a pH buffer, but this is not safe; it is not permanent, and there is no point in adding stuff that is not going to safely do "x" as this makes life more difficult for the fish.
