So I've been trimming my moneywort and replanting the cuttings, but I find that the original plant will fail to continue to grow and eventually start rotting. I tried cutting part of the stem too (the part without leaves) and that rotted too. However the cuttings I cut from the top will root very fast.

I have my lights on ~8 hours a day and I have a DIY co2 yeast system. Am I doing something wrong? Is there somewhere where I'm "supposed" to trim?
 
That should work fine and the original part should sprout 2 shoots where u trimmed 1 from, are you dosing fertilisers?
 
Using CO2 makes the plants photo synthesise faster, this makes them use up the nutrients in your tank faster hence you need to be dosing some ferts.
