im not sure tbh what plant melting is, but i think its the issue im having.

Some of my plants are doing good, but my (i dont know the names) long grass like ones just seem to disintergrate every day leaving me with lots of floating debry, what can i do to

a - stop plants 'melting'

and

b - increase growth?

plants melting is normally due to a change in the conditions. are they new to the tank?

ohh right it probably is melt then. they are just getting use to there new water conditions.
trim off any dead leaves. they probably wont grow back.
they should be sending off some new leaves.
there is nothing you can do to stop them melting. but they should only melt once. when you first put them into the tank. becasue they are getting used to the water conditions. long if they stay the same they shouldn't do it again

as for increasing the growth. plants need 3 things to grow

light
minerals (ferts)
and CO2

if you up your lighting you would have faster growth rates. but you would also need to supply them with ferts and CO2. or they will die off.

how many WPG of light do you have?

I had a similar issue and after just trimming they're improving I'm planning on making a DIY CO2 kit soon they seem simple but very effective for plant growth.
