I am finally upgrading my lighting in my 29gal tank from the standard 20W flourescent to a 55W fixture from AHSupply.

I have two Anubius' already. They have grown well under the current lighting conditions, except they are leggy. The stem comes up about 3 inches before there are any leaves, kinda looks like a tree instead of bushy, as if the plant is trying to reach up for some light. Once I get the new light in is this condition fixable? If I cut off the stem will new roots grow? Or should I just scrap them and just buy all new plants?

Anubias generall produce roots further up the main stem as the plant grows. If you cut the stem so that both resultant plants have both at least a couple of leaves and some root system you will have two plants to use! Cutting of the stem is how the plant is generally propagated in the aquarium.

Any new leaves that come out will not grow as high. And you should soon see new plants propogating from the mother plant.
 
My anubias was doing the same thing, but now smaller stalks and leaves are forming underneath them - as Dubby said.

Yeah, rhizome, not stem.
The Barteri in my tank has grown vertically, not horizontally. It's about 50cm tall although it's covered in BBA right now. Once that problem has cleared up I'll be slicing it into two or three as I described earlier. Interesting to read that you can make the plant branch by nicking the rhizome with a sharp knife.
