Sounds like you are on the right track! Both the API Quick Start and the aquaeon balls have beneficial bacteria in them so hopefully your cycle gets established soon. Keep testing for ammonia and nitrates every day before you do your water change - that will help you track where you are in your cycle
I have a question! If I keep changing the water every day, won’t that stop the cycle from occurring by removing bacteria? Will I also need to add more nitrifying bacteria in there with each water change, or is the bacteria in the API products being used to condition the water enough?

The bacteria we want to grow live on surfaces not floating in the water. Provided you remember to dechlorinate the new water, the developing bacteria colonies will not be harmed.
