I did a ~40% water change this morning and I just checked my ammonia level is 0.25ppm and my nitrite level is 0.25ppm. Iā€™m aware this isnā€™t the best. I only have water that is about 7 hours old.. What should I do?

I would do another water change, of at least 50%. Any time there is ammonia or nitrite present, it is unhealthy for your fish. Make sure you are using a good water conditioner as well.

Check your water source to see if it has ammonia, nitrite, nitrates.

Yes good advice... I have nitrates in my water which I only realised after testing it. I always had zero ammonia and nitrites... but after a water change moderate nitrates... couldnā€™t work out why until I did this. As I have a big filter after a week the nitrates also reduce significantly as the bacteria convert it to nitrogen. So I need to be careful with big water changes.
