Glass Catfish used to be in middle of the tank now they hide all day

Here is a picture of my 55 gallon tetra (sunken forest) tank. The plants floating are anacharis which forms an arch. My small ember tetras like staying in the anacharis forest on the end of the tank.

I can definitely see how the dark background changes the look of the tank and makes them feel safer. I do have a little anacharis but not nearly enough compared to yours. I can definitely add more floating plants
 
pictures of the fish?

your tank is part of the problem. white substrate, no picture on the back and very few plants. that will stress them. poor water quality will too.

put a picture on the back.
do a 75% water change and gravel clean the susbtrate every day for a week. make sure any new water is free of chlorine/ chloramine before it's added to the tank.
add some floating plants like water sprite.
I agree.
Although the water seems fine IMO.
