Yesterday I added a reverse trio of guppies to a 10 gallon (no lid) and left right after. I came back a few hours later and noticed the large female was missing. After searching in the tank, I moved a water vac on the floor and founder her partially dried up. I picked up the limp body and threw it in the water just in case. The body floated for a sec, but then she started wiggling around, but quite weakly. Today she's better but she cannot swim perfectly as she has a loss of some of her tail fin. Will this grow back? Thank you.

The tail will grow back, yes, assuming the fish survives the shock...

Should I be adding anything like Stress Coat or something?

I'd just keep the water quality really good. You may need to treat it if it develops fungus or fin rot.
