i dont think the colour of the gravel actually phisycally changes the colour of the fish. im not much of an asthetics man but i think that one way to get some really nice colours out of them is to put a mirror up to the tank side once in a while. dont leave it there tho or they will just go nuts all the time and stress themselves this also works for betas tho im not as big a "fan" of this practice as some. many of the terratory fish would see a mirror as bing part of a territory that some other fish like them was protecting in theory leaving the aria clear for the non terratory fish like neons the one problem with that theory is that animals and fish tend to leave fighting to when they cant work things out by showing off.

here is an example (i know you where asking about gravel but i dont care) say i wanted a patch of the tank and i was in there most of the day and you came along and said "i want your patch of the tank instead of mine" id say "make me". then you would umm turn red and umm threaten me somehow like "you had better leave or i will... threat" this is the part before fighting thus if one fish looks bigger and better and there is room in the tank for all the fish then there will probably not be too much bulliing because the others will avoid the big fish. larger central american cichlids dont follow the rules like other fish... the small ones dont tend to follow the rules ither... but thats how the mirror thing works because each one is saying grr louder and the reflection allways seems to be winning. only some fish dont get their own message and decide they want to fight the side of the tank... the tank wins.
