Coloration changes in Koi Betta

I got a Koi Betta about 1.5 months ago. When I first got the betta it was predominantly white with the typical red, blue, pink koi pattern on top. In the time I've had the betta, it's coloring has changed significantly with the colored areas on the betta expanding. Now the whole tail-end of the fish is blue and the pelvic fin is nearly entirely red. The coloring is still very nice, I just found it interesting that it changed so much in a fairly short period of time.

Has anyone had a similar experience like this with Koi Betta?

Yes, I rescued a Koi betta from a chain store. It was predominately yellow body color and red spots so of course I named him Tony (Stark). Brought him home and after a couple days of good water and food he lost his yellow and got a pearlescent white body color and gained some blue spots. Looked 100% different than when I bought him.

Koi and marbled bettas are insane in how they look completely different every few months . It’s pretty cool
