we have a clown plecostomus that changes shades. i.e. dark at night and light in color during the day. is this a defense mechanism? or the result of Ph levels at different times?

It's not the result of pH differences (there shouldn't be any swings in pH during the day; if there are they'd only be minor), just normal camouflage and communication. Of course, poor water quality can upset fish and make them show stress colouration; usually stripes or bars on most fish species.
