We have/had 6 cherry shrimp along with some guppies and black catfish (can't remember the name of them buy they can go with shrimp), we have had them about 3 weeks and yesterday 1 shrimp was dead, this morning I woke up and saw another had died. Is this normal or should I be looking into something ?

When we first had them they were pretty active around the tank, climbing the plastic wooden log we have and walking across the sand etc but the last week or so we have noticed they are just hiding and walking around a fake tree that's in the tank.

How long has the tank been set up for?
What is the ammonia, nitrite, nitrate and pH of the tank water?
How often do you do water changes and how much do you change?
Any pictures of the fish and shrimp (living and dead)?

---------------------
If you ever have sick fish or a fish dies, test the tank water and then do a 75% water change and gravel clean the substrate every day until the problem is identified. The water changes and gravel cleans dilute nutrients and reduce the number of disease organisms in the water and give the remaining fish the best chance of recovering.
Make sure any new water is free of chlorine/ chloramine before it's added to the tank.

Get a gh test kit and check the hardness of the water. Shrimpneed calcium and magnesium to successfully molt. The GHtest only detects calcium and magnesium If your water is too soft then cannot molt. IF your water utility uses mostly surface water it might be very soft.
