Hi guys i have dismantled my 80 liter community tank and im looking for breeding project ideas. I have really soft water with a low kh. Any ideas welcome.

Dwarf cichlids. Get a pair, and then a few tetras or something.
 
Whatever you get will be fun. Having a working tank as opposed to a viewing tank is something every aquarist should have. Get your hands wet and produce fish to share, give away or sell. With your water you can have almost anything you want. Pick something easy to start. Success breeds enthusiasm. I like @HoldenOn 's suggestion of Dwarf Cichlids. The fish do most of the work themselves and the fry are fairly easy to raise.

Mikrogeophagus ramirezi? They are really fun to watch, and hard to get them to pair, so it's a nice challenge.
 
If i were to go with rams would a trio be enough or would you be better getting like 5 of them
 
Killifish are challenging. You don't raise an awful lot of fry because egg collection is small. Tetra's ! There's a real challenge. I've never had success with tetras and from what I read around here it's not something that happens often. Something I didn't know until recently was that Otocinclus have been captive bred. Since you've done Plecostomus that might be of interest to you.

I've been looking into breeding otos. It's been done, but it's hard, and generally very small numbers, not enough to produce masses and reduce the trade in wild caught, sadly, so could be a very rewarding project.

Pretty sure I've seen mine spawning and two females carrying eggs, but no fry joy yet, and I could be wrong. These two were certainly rounder than their normal round tummies, and they're back to normal now, not sick or anything.

Is their any shell dweller that can go in soft water
I don’t know but there’s a few on here with experience of them.

I was pointed in their direction a few times when I first washed up on here due to my 19dh tap water and tank size. They seemed a bit complex for someone whod been out of fishkeeping for 23yrs as there’s so much to learn without specialisation these days. I always look out for them in my lfs though.

Killifish
Bettas (not splendens but others like B. imbellis or something interesting).
 
I loved my tank with pygmy catfish and clown Killifish. Over about a year the school of pygmy catfish grow from 10 to 60 and the killifish from 6 to 30. Didn't have to do anything apart from watch, it is so neat as the little guys join up with the bigger ones and the school grows. Black phantom tetras are another fish you can do this with, and of course white clouds.
