I have had these guys since they were tiny.
I believe I have a mixture of M/F

I was hoping they are getting close to breeding. There is one that has really changed its colours I believe it’s a female?
(Picture with strips)

She hides a lot but also is really a bully and chases everyone off.

The larger one with the head bump I believe is a male?

People seem to hate the Latin names of fish, but for 99% of aquarists, a blue eye is a Pseudomugil from Australasia. Your Central American Cichlid looks to be a Cryptoheros sajica. It's hard to tell with the image size I'm getting here.
I've bred 3 of the Cryptoheros, and all were similar. Breeding involved serious digging. There was no missing it. The dominant male gets the hump on his head. I never had the luxury of a group to see how dominated males coloured compared to females, but chance are that's a pair.

Are they sajicas, or do I need new glasses?

I believe they are Archocentrus spilurum.

There is 5 in the tank, however only 1 is a lot larger and definitely has the head bump.

I guess 1 male and 4 females would give good odds of breeding?

Ah, those trade names. It's one of half a dozen blue eyed cichlids, and the only jade eyed cichlid. I'd just call it spilurus. It's easier! So far I have seen spilurus, nanoluteus, sajica, cutteri and A myrnae sold as blue eyes. If you are trying for a pair from differeent sources, that has its risks. You might not get the same species.
You could have 4 females, but the dominant male can suppress dominated males chemically and behaviourally.
