The solenoid as shown at the bottom of the link page for your kit will allow you to shut off the CO2 at night when the plants dont need it. You just need to plug it into a timer plug and you can automate the co2 supply. With a PH controller ( a lot more expensive) you can have a much finer balance of your PH values by allowing the controller to turn the co2 on and off to balance the PH. Dont let the sensor leave the water with this method or you could have a massive dose of Co2 and fish loss.
 
Yeh as FoF says, a solenoid would allow you to turn it off at night automatically, a pH probe keeps the pH of the tank at a set level but adding or reducing the amount of CO2 in the tank, the theory being that this means you can keep the CO2 level in the tank at 30ppm automatically.
