Are My Readings Getting Gradually Better?

Pre-50% water change

10 US Gallons
Nitrate: 40
Nitrite: 10
GH: 75
KH: 80
pH: 7.2
(Ammonia said 0)

After 50% water change, before putting fish back in

Nitrate: 20
Nitrite: 3
GH: A little under 75
KH: 40
pH: 7.0
Ammonia still says 0

...I don't think my ammonia test is quite accurate, as my Molly's head shakes, which seems to mean Ammonia poisoning.

Do things seem to be going well so far?
I'm planning on doing daily 10% water changes as well, can the fish stay in the tank when I do this, as long as they don't get mixed in with it?
 
It's now definitely going to be overcrowded until my sister picks up the Balloon Molly Fry and Guppy...and when the Red Wag Fry get..."weeded" out.

But right now:
1 Balloon Molly
1 Red Wag Platy
1 Sunrise Guppy
1 Neon Tetra (had 3...other two died >.<)
1 Small Undefined Algae Eater (I'm just that smart...I forgot)
1 Ghost Shrimp
7 Balloon Molly Fry (not even half an inch long)
6 (known) Red Wag Platy Fry (not even 1/8 inch long)

I've got an under-gravel filter by Top Fin
