Anubias

I have a couple of anubias plants which are growing off my wood and I was wondering since they all seem to have decent roots then am I ok to literally cut a little off to attach to more wood?

Yep.

Yes, but make sure you cut the Rhizome, and do it with a sharp knife right between the nodes.
