Is it ok to root this plant in the gravel as long as I leave the rhizome uncovered? I keep finding contradictory info on it!

Yes, it will actually do better if the roots are in the substrate. Just don't bury the rhizome. I've kept various anubias species this way for many years in my tanks, never had any problems.
 
I dont think so. I have a some strapped to a piece of drift wood that is growing very well , I have a lot of root tabs in my gravel, but thoses doesnt seem to outgrowing the others.. adding normal fetilizer to the water helps.
