I have a coule of tanks I'm about to start up with sponge filters as they will be breeding/fry tanks (and I have them spare as opposed to buying new power filters). Whats the best way to seed them, so I can get fish/fry in there ASAP? Would just attaching a bit of sponge from a cycled power filter work? Plus maybe a handful of gravel from a cycled tank as well?

The best way is to let them run in a cycled tank for a couple of weeks.

While I agree with Tolak, If you must try to Cycle them in your NEW Fry Tank.
Try adding in SOME Bio Zyme, you should be able to get some at your local PS.
Whenever I change Some of my Media in my Filters, I always leave SOME of the Old in to help Re Seed the New, Plus add a little Bio Zyme to the water as well, it SEEMS to speed the process just a bit.
