I've heard of people feeding the guts and insides of mealworms to bettas. I tried it once but it was just too gross because the mealworm kept trying to get away

Yes you can.

Cut them open and use a twezzer to hold them in the water, The betta can then eat from the open part.

Females are the most Inquisitive so they will take it easily.
