Where did you hear that Apple Snails can live out of water for 2 weeks?
Try feeding them at night with sinking wafers or floating pellets.

They can survive out of the water for days, I bet easily for a week, two weeks might be already too long and they would be hungry, maybe even too weak to recover. Adult apple snails are sometimes shipped in a padded box with damp paper towels around the snails. They just close their shells and breathe air from time to time. In a dry place they would dry up rather soon though. I advise not to try it just for fun, they are more comfortable in water.

And about the feeding. As already said, soft vegetables are good, salad, peas etc. And feeding it at nigh since they are more active then. But if it looks like it still doesn't eat, you could lift it up and put it in a container with some water and food on the bottom. Just make sure you don't drop the snail and don't leave it alone, it might escape and drop. Their shell is fragile.

It's true, apple snails can live for extended periods out of water and even lay their eggs out of water. They come equipped with gills and also lungs so can breath both in and out of water. They are also one of a few snails who aren't hermaphrodites, they are either male or female, not both.

My snail has crawled out of the tank a couple of times, but i dodn't think she eats out of water because she tends to close her operculum it she gets picked up or falls on the floor.
They like algae wafers and peas, but my gold fishes do move the food around and try to eat it if the pieces are small enough. None of my other fish are big enough to even think of picking up a whole algae wafer, or even a half one, or a quarter.

My snails heavily compete with my cories and neons for food. Snails have no brain so they have no memory so they have no idea they have already eaten and therefore always think they're starving. That's my theory at least.
