it depends some people keep them till about an inch others till nearly fully grown
then it depends who they are going to, stores only take them at a certain length whereas other fishkeepers will take them smaller |

Welcome davmac. The biggest determiner of the size you keep them is how much room you have for them to grow up. In my case, I have about 30 that I intend to keep until they are adults or close to it but I have a 120 gallon tank for them to grow up in. They are presently in a 29 which will only hold them until about 1 1/4 inches and then they must move to the bigger tank. That tank would be dangerous for them right now because there are some large fish in it.
