Zucchini is better for them than cucumber, but yes, you can use cucumber. If you're going to do lettuce, I would suggest boiling it first to make it softer. My fish have personally never cared much for lettuce though.
One thing your clown loaches will absolutely love and go crazy for would be snails. Generally if you go to pet stores you can get a bunch of their aquatic snails (the really small ones) for little to no charge. God Bless, Joshua |

You could also try giving them some frozen (but dethawed!) bloodworms or baby brine shrimp.
Tasty treat for the finned ones! |

Baby Brine Shrimp would be way to small for the loaches, You might want to get adult's.

Live blackworms are also readily taken by most fish including livebearers and loaches
Frozen salad shrimp are also favorites. Frozen Mysis shrimp can also be used. Blanched and de-shelled peas aren't bad, but not feeding frenzy inducing. Microwave the for 20s, then once cool put the round pea in between your fingers and squeeze the middle squishy part out of the pea. Throw the "husk" or shell out and feed them the squishy part. zuchini is also called courgette i think over there? and to get vegetable matter to sink, blanch it first (drop it in boiling water for 15-20 seconds or so then toss it in the fridge) to semi-cook it and soften it, as well as allow it to sink.
