Hi got a trio of blue panchax, will they spawn in mops?

and would they eat cherry shrimp do you think, and would the cherry shrimp eat the eggs?

The novelity is that at Japanese guy uses shrimp to clean his killifish eggs and keep them from going bad, whereas we would use some sort of chemical fungicide (I personally refrain from using chemicals as far as possible)
Blue Panchax will surely spawn in mops.
They probably will take notice of the Cherry Shrimp at some stage and will devour them.
